According to TSN's Darren Dreger, the NHL is planning to keep the 2021 Draft in its originally scheduled July slot.

There will likely be a lot of NHL general managers unhappy with this decision, as many lobbied for the league to push the draft back to 2022 due to the fact many draft eligible prospects have played very little this season if at all due to the COVID-19 pandemic. Had they pushed the draft back to next year as many teams hoped, it would have given scouts more time to evaluate players, and given the players more time to make an impression.

Dreger did go on to confirm that this has not yet been confirmed by the NHL, though he says his sources have indicated that is the plan. In a normal year, the draft would be held in June rather than July, but due to the NHL season starting much later than usual it was scheduled one month later.
